Cilantro Hummus

Ingredients

can chickpeas
drained and rinsed

fresh jalapeno pepper
seeds removed

clove
garlic

fresh cilantro

fresh lime juice

kosher salt
if using table salt, use less and salt to taste
¼
cup
extra virgin olive oil
Pita Chips
Instructions
Mince garlic and jalapeno pepper in a food processor.
Add all the chickpeas, cilantro, lime juice, and salt and process until thoroughly combined to a paste.
Add olive oil and process until smooth. Add more olive oil if it is too thick.
Refrigerate for at least 2 hours to allow flavors to combine (a day ahead is better). Bring back to room temperature before serving with pita chips.
