Delsie's Warm Mustard Dill Potato Salad

Servings: 12 servings

Ingredients

  • 2 pounds small red potatoes
  • 1 cup mayonnaise
  • ¼ cup Dijon mustard
  • ½ cup chopped red onion
  • 2 green onions with tops sliced
  • 2 garlic cloves chopped fine
  • 1 tbsp dried dill weed
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon lime juice

Instructions

  • Cut the potatoes in half or quarters or leave whole depending on the size of the potato. Place the potatoes in a saucepan and cover with cold water. Bring to a boil and cook until tender, about 10 minutes. Drain thoroughly and cool slightly.
  • Combine the remaining ingredients. Add the mixture to the warm potatoes and toss to coat. Serve.

Notes

May also be served cold.
3 tbsp of fresh dill may also be used in place of dried.
