Delsie's Warm Mustard Dill Potato Salad
Servings: 12 servings
Ingredients
- 2 pounds small red potatoes
- 1 cup mayonnaise
- ¼ cup Dijon mustard
- ½ cup chopped red onion
- 2 green onions with tops sliced
- 2 garlic cloves chopped fine
- 1 tbsp dried dill weed
- ½ teaspoon salt
- ½ teaspoon pepper
- ¼ teaspoon lime juice
Instructions
- Cut the potatoes in half or quarters or leave whole depending on the size of the potato. Place the potatoes in a saucepan and cover with cold water. Bring to a boil and cook until tender, about 10 minutes. Drain thoroughly and cool slightly.
- Combine the remaining ingredients. Add the mixture to the warm potatoes and toss to coat. Serve.
Notes
May also be served cold.
3 tbsp of fresh dill may also be used in place of dried.
