Cilantro Hummus

Ingredients

  • 1 15- oz can chickpeas drained and rinsed
  • ½ fresh jalapeno pepper seeds removed
  • 1 clove garlic
  • ¾ cup fresh cilantro
  • 1 ½ tbsp fresh lime juice
  • ¼ tsp kosher salt if using table salt, use less and salt to taste
  • ¼ cup extra virgin olive oil
  • Pita Chips

Instructions

  • Mince garlic and jalapeno pepper in a food processor.
  • Add all the chickpeas, cilantro, lime juice, and salt and process until thoroughly combined to a paste.
  • Add olive oil and process until smooth. Add more olive oil if it is too thick.
  • Refrigerate for at least 2 hours to allow flavors to combine (a day ahead is better). Bring back to room temperature before serving with pita chips.
