Cilantro Hummus
Servings: 8 servings
Ingredients
- 1 15- oz can chickpeas drained and rinsed
- ½ fresh jalapeno pepper seeds removed
- 1 clove garlic
- ¾ cup fresh cilantro
- 1 ½ tbsp fresh lime juice
- ¼ tsp kosher salt if using table salt, use less and salt to taste
- ¼ cup extra virgin olive oil
- Pita Chips
Instructions
- Mince garlic and jalapeno pepper in a food processor.
- Add all the chickpeas, cilantro, lime juice, and salt and process until thoroughly combined to a paste.
- Add olive oil and process until smooth. Add more olive oil if it is too thick.
- Refrigerate for at least 2 hours to allow flavors to combine (a day ahead is better). Bring back to room temperature before serving with pita chips.
