Cajun Meatloaf

Servings: 10 Servings

Ingredients

  • Meatloaf Mix:
  • 1 lb ground beef
  • ½ lb ground pork
  • ½ lb ground veal
  • Seasoning Mix:
  • 2 bay leaf
  • 2 tsp salt
  • 1 tsp red pepper
  • 1 tsp black pepper
  • ½ tsp white pepper
  • ½ tsp cumin
  • ½ tsp ground nutmeg
  • Sauce Mix:
  • 4 tbsp butter
  • ¾ cup onion chopped
  • ½ cup celery chopped
  • ½ green bell pepper chopped
  • ¼ cup green onions chopped
  • 2 tsp minced garlic
  • 2 tsp Tabasco sauce
  • 1 tbsp Worchester sauce
  • ¼ cup evaporated milk
  • ½ cup ketchup
  • 2 eggs
  • 1 cup bread crumbs

Instructions

  • Preheat oven to 375°F.
  • Combine beef, pork, and veal.
  • Combine seasoning mix ingredients.
  • Melt butter over medium heat in a skillet. Add onions, celery, green bell pepper, green onions, and garlic and sauté for about 2 minutes.
  • Add tabasco, worchester sauce, and seasoning mix and sauté for about 6 more minutes.
  • Stir in milk and catsup and cook 2 minutes.
  • Cool slightly and remove bay leaves.
  • Add the sauce mixture, eggs and bread crumbs to the meat mixture and mix. Shape into 1 large loaf or 2 smaller loaves (2 loaves makes more end pieces for those who like those).
  • Line a rimmed baking sheet with foil (use Reynolds nonstick foil or spray foil with cooking spray) and place free form loaves on sheet.
  • Bake for 40 to 45 minutes until brown. Optionally, spread a layer of ketchup or tomato sauce on top, layer with sliced cheese and return to oven until cheese melts.
  • Transfer to a plate and let rest about 10 minutes before slicing and serving.
  • Serve with Cajun Very Hot Sauce for Beef
