Zucchini Fries
Ingredients
- 1 ½ lbs small zucchini
- ¼ cup olive oil
- 2 garlic cloves very finely chopped
- 2 tsp finely chopped fresh thyme
- 2 cups all-purpose flour
- 2 cups panko breadcrumbs
- 2 eggs
- 6 to 8 cups vegetable oil for deep frying
- Coarse sea salt
Instructions
- Cut the unpeeled zucchini into 3-inch lengths and then cut these into wedges about ½ inch wide. Cut the wedges to the same size so they will cook evenly.
- In a large bowl, whisk together the olive oil, garlic, and thyme. Add the zucchini wedges and toss well. Marinate about 20 minutes.
- Heat the oil to 350ºF. Spread the flour and breadcrumbs on separate plates. Beat the eggs in a large bowl.
- Remove the zucchini from the marinade and drain off the excess oil. Toss them in the flour until they are well coated. Shake off excess flour, then dip them in the egg, then roll them in the breadcrumbs until evenly coated.
- Fry, in small batches, until browned, about 5 minutes.
- Drain the fries on paper towels and season generously with salt. Serve hot with a favorite dip.
Notes
Fresh green beans or asparagus can also be used for the fries.
