Meatballs with Marinara Sauce

Ingredients

  • 2 tbsp olive oil
  • 1 large onion
  • 4 garlic cloves minced
  • 1 ½ tsp dried oregano
  • 4 slices white bread
  • ¾ cup milk
  • ½ lb hot Italian sausage casings removed
  • 1 cup Parmesan cheese grated
  • ½ cup fresh parsley chopped
  • 2 large eggs
  • 2 garlic cloves minced
  • 1 ½ tsp salt
  • 2 ½ lbs ground beef chuck 80%
  • 1 recipe Hearty Marinara Sauce or your favorite spaghetti sauce

Instructions

  • Preheat oven to 450º.
  • Heat oil over medium high. Cook onions until golden, 10-15 minutes.
  • Add garlic and oregano and cook another minute. Set aside to cool.
  • Mash the bread and milk in a large mixing bowl until smooth.
  • Combine the onion mixture and the remaining ingredients except for the ground beef and spaghetti sauce.
  • Add the beef and mix until combined.
  • Divide mixture into 16 portions, and form into meatballs.
  • Place meatballs on a baking sheet and bake on the upper middle oven rack for about 20 minutes, or until well browned. Remove and place on paper towels to absorb grease.
  • Heat the Marinara Sauce. Add the meatballs to the sauce and simmer for for 15 minutes before serving.

Notes

These make excellent meatball subs.
