Meatballs with Marinara Sauce
Ingredients
- 2 tbsp olive oil
- 1 large onion
- 4 garlic cloves minced
- 1 ½ tsp dried oregano
- 4 slices white bread
- ¾ cup milk
- ½ lb hot Italian sausage casings removed
- 1 cup Parmesan cheese grated
- ½ cup fresh parsley chopped
- 2 large eggs
- 2 garlic cloves minced
- 1 ½ tsp salt
- 2 ½ lbs ground beef chuck 80%
- 1 recipe Hearty Marinara Sauce or your favorite spaghetti sauce
Instructions
- Preheat oven to 450º.
- Heat oil over medium high. Cook onions until golden, 10-15 minutes.
- Add garlic and oregano and cook another minute. Set aside to cool.
- Mash the bread and milk in a large mixing bowl until smooth.
- Combine the onion mixture and the remaining ingredients except for the ground beef and spaghetti sauce.
- Add the beef and mix until combined.
- Divide mixture into 16 portions, and form into meatballs.
- Place meatballs on a baking sheet and bake on the upper middle oven rack for about 20 minutes, or until well browned. Remove and place on paper towels to absorb grease.
- Heat the Marinara Sauce. Add the meatballs to the sauce and simmer for for 15 minutes before serving.
Notes
These make excellent meatball subs.
